Ingredients
Directions
brown sugar
1/2 stick margarine
juice of 1 orange
marshmallows (optional)
Peal and slice 6 to 8 medium sweet potatoes.
Boil in approximately four cups of water (or enough to cover potatoes) together with 1 cup of sugar, 1 teaspoon cinnamon and 1 teaspoon nutmeg.
Let boil until potatoes are tender.
Remove potatoes from water and place in layers in baking dish, sprinkling cinnamon and brown sugar between each layer. Set aside.
To the water, add 1 1/2 cups sugar and 1/2 stick margarine. Cook until mixture thickens like syrup.
Pour over potatoes and add juice of 1 orange.
Orange peeling can be grated over potatoes, if desired.
Place in oven and bake at 300° to 350° for 30 minutes.
Add marshmallows (if desired) and brown.
TIP: Soak raw potatoes in cold water for at least 30 minutes before frying to make French fries crispier.
