Pies, Cakes and Desserts
Ingredients
Directions
2 lbs seeded raisins
1 lb and 2 oz sugar
6 eggs
1/2 cup buttermilk
1/2 cup sweet milk
2 oz lard
1 lb flour
3/4 lb butter
Start oven at about 300°. Turn up a little after cake has risen a little. Bake 2 to 3 hours.
This was Cousin Belle Kirk’s recipe and the cake was delicious when she made it. However, when I made it, it was a total flop. Barbara Ann.
Mama and Aunt Belle called this cake "Plum Cake" although it has no plums in it. It was also called "Pour Man's Fruit Cake." Aunt Belle said that the secret to the cake is flouring the raisins. Be careful how much flour you use on the raisins; too much flour on the raisins will add too much to the cake and cause the raisins to fall. Elba.
NOTE: Cousin Belle Kirk lived in the house next to the Post Office in Dundas. After her death, Sam and Mabel Fraher lived there. After Sam’s death, Charlie and Frances Palmer bought the house (where Frances lives today).
