1 cup buttermilk
1 cup milk
2 eggs
2 tablespoons melted butter
1/3 cup plain corn meal
1/2 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
Preheat oven to 475°.
Sift 1/3 cup corn meal with 1/2 teaspoon soda, 2 teaspoons baking powder and 1/2 teaspoon salt. Beat 2 eggs with 1 cup milk and 1 cup buttermilk. Melt 2 tablespoons butter in baking pan. Mix dry and liquid ingredients and IMMEDIATELY pour into hot baking dish.
Bake at 475° 25 to 30 min. or until center is firm.
