PINEAPPLE FLUFF OR COOKIE PIE

1 pkg (3 oz) lemon gelatin
1 cup sugar
1 egg
1 cup pineapple juice
1 (12 oz) can evaporated milk - chilled
vanilla wafers
Mix gelatin and sugar. Add beaten egg; gradually add pineapple juice. Bring to a boil and boil about one minute, stirring constantly. Remove from heat. Let cool.
Line two pie plates with vanilla wafers. Whip evaporated milk and fold in cooled pineapple mixture. Pour into pie plates. Let chill.
This recipe was given to me by Mrs. Henry Davis. It's very refreshing on a hot day.
