PINEAPPLE UPSIDE DOWN CAKE
Pies, Cakes and Desserts
Ingredients
- 1/2 stick margarine
- 1/2 cup brown sugar, firmly packed
- 1 1/2 cups crushed pineapple
- 1 cup self-rising flour
- 3/4 cup sugar
- 1/4 cup corn oil
- 1/2 cup milk (I use skim)
- 2 egg whites (you can use whole eggs if cholesterol is no worry)
- 1/2 teaspoon vanilla
Directions
Preheat oven to 350°.
Put margarine in an 8-inch cake pan (round or square - I use round because it fits a regular dinner plate).
Place pan in oven until margarine melts. Remove from oven and sprinkle brown sugar over melted butter. Pour in pineapple.
In small bowl mix flour and sugar. Add oil and half the milk and stir until blended. Add remaining milk, beaten egg whites and vanilla. Beat for 1 to 2 minutes.
Pour this batter over the crushed pineapple. Bake at 350° for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven. Cool for 2 to 3 minutes. Invert onto serving plate. Let pan stay on cake for several minutes to allow all the sugar mixture to soak into the cake. Remove pan. Serve warm or cooled.
VARIATION: Substitute pineapple slices for crushed pineapple and arrange in a pretty pattern with a maraschino cherry in the center of each slice. You may also add pecan halves.
ANOTHER VARIATION: Substitute sliced peaches for pineapple.
