SPECIAL RIB SAUCE
Meat, Seafood and Poultry
Ingredients
- enough for 60 lbs of ribs
- 2 onions - chopped
- 2 green peppers - chopped
- 1 tablespoon chopped fresh parsley
- 5 cloves garlic
- salt
- black pepper
- hot peppers (red pepper flakes)
- hot sauce
- 1/2 cup good wine
- 2 large bottles ketchup
- 1 bottle vinegar
- 1 large can pineapple tidbits
- 1 tablespoon molasses
- 1 tablespoon honey
- 1 tablespoon brown sugar
- oil for sautéing
Directions
In a frying pan cook pineapple tidbits until juice is reduced by half. Add 1/2 the wine to deglaze the pan. In another frying pan sauté onions, peppers, parsley and garlic until the onions are clear. Add remaining wine to deglaze pan.
Put sautéed items in a large saucepan. Add 1 1/2 bottles of ketchup, 3/4 bottle vinegar, 1 tablespoon molasses, 1 tablespoon honey and 1 tablespoon brown sugar. Bring to a boil and simmer for 30 minutes.
Add remaining ketchup and vinegar. Add 1/2 the salt, black pepper, hot sauce, and red pepper you think you want and simmer for 10 minutes. Taste to see if you want more salt, pepper, hot sauce or red pepper flakes; add only 1/2 of what you think you need and simmer for 10 minutes before tasting. Continue this until you get the taste you prefer. Add additional ketchup and vinegar as needed to maintain the consistency you desire.
